I Made Meghan Markle's Honey Lemon Cake—And My Coworkers Devoured it

When I first watched With Love, Meghan after it premiered on Netflix, I knew I absolutely had to make the Honey Lemon Cake she makes in the first episode. I've already made the focaccia, and that turned out great. As a baker who makes a lot of cakes, this one sounded sweet, refreshing, and not too difficult!

I'm happy to confirm, it was just as good as it looked on the show. Plus, I brought it to work and it was devoured in probably 20 to 30 minutes. I walked by the office kitchen shortly after setting it out for everyone and had to do a double-take because there was only a quarter of the cake left!

There are so many things to love about this cake, from the lemon honey syrup to the jam between the layers. The super simple frosting and decorating technique, too! The sides of the cake are unfrosted, and the top gets covered with raspberries. While I love making layer cakes with fun decor and designs, you don't have to do those things in order to have a good quality cake.

Now, I did decorate mine a little differently than Meghan did, mostly because I assembled the whole cake and there was quite a bit of frosting leftover. And if anyone knows me, they know that I'm not going to let any frosting go to waste! The more, the merrier.

In the episode, Meghan uses some of her own raspberry jam between the cake layers, but I already had a jar of strawberry preserves at home, so I just used what I already had on hand. So many spring and summer flavors pair well with lemon, so you can get creative with your preserves and jam flavors here! Raspberry, strawberry, blueberry, blackberry...I could just list all of the berries and fruits, and it'd all probably be delicious. You could even go 100% lemon and use lemon curd.

It might seem like there are a lot of steps for this cake, but each component is easy and approachable. The cake recipe is straightforward and produces cake layers with a deliciously soft and tender crumb. The lemon honey syrup is super easy to stir together in a saucepan on the stovetop. The frosting is your usual buttercream (I did add some lemon zest and flavoring to mine because why not!). And your jam of choice.
