Materials
- Mandoline (or sharp knife)
- Parchment paper
- Bowl
- Dishcloth (or paper towel)
Preparation

First, wash the potatoes.

Then peel them and cut them into thin slices using a mandoline (or sharp knife).

Soak the slices in cold water for 30 minutes.

Drain the water and place the slices on a clean tea towel (or paper towel) to absorb as much water as possible.

In a bowl, add the potatoes and drizzle with a little olive oil. Season to taste. We only use salt, but pepper and paprika are welcome. Mix well.

Place the slices in a shallow dish covered with baking paper. Arrange the slices so that they are not piled on top of each other.
