Chicken with a creamy spinach and mushroom sauce
Main Dish
A dinner idea, super easy to prepare : make the sauce, put your cooked chicken in it and serve with some rice.
Ingredients
Chicken :
- 1 knob of butter
- 1 drizzle of olive oil
- 3 chicken thighs
- salt
- pepper
- thyme
- 1/2 cup water
Sauce :
- 1 knob of butter
- 1 drizzle of olive oil
- 1 shallot
- 17.5 oz mushroom
- 9 oz spinach (fresh or frozen)
- 2 cups vegan cream (we used rice)
- Salt
- Pepper
Preparation
Step 1:

Remove chicken bones and cut the chicken thighs in halves. Melt the butter with olive oil in a hot pan and cook the chicken 5 min on each side. Add salt and pepper, thyme and stir. Pour the water in the pan and cover. Cook for 45 minutes.

Melt butter with olive oil in a hot pan, add mushrooms, sliced and stir for 5 to 10 minutes. Add chopped shallots and spinach and cook for 5 to 10 minutes more. Season with salt and pepper. Pour the cream in the pan and stir for about 10 minutes.

Put the cooked chicken in the sauce and there you are ! Your dinner is ready !
