Lentil salad with sweet potatoes
Starter
For a hearty salad filled with plant proteins, nothing beats lentils! Combine these legumes with roasted sweet potatoes, tomatoes, arugula, red onion, and you have a complete and colorful dish. Get started with our step-by-step instructions in both written and video format ;-)
Ingredients
- 450g sweet potato (1/2)
- 3 tablespoons olive oil
- Salt
- Pepper
- 1 cup water
- 80g green lentils
- 150g cherry tomatoes
- 1/2 red onion
- 15g parsley
- 20g arugula
- Juice of 1 lemon

- 1 salad bowl
Preparation
Step 1:
Step 1 - Lentil salad with sweet potatoes
Put the lentils and water into a pot and bring to a boil. Once boiling, reduce heat and let simmer for 25 minutes. Drain and set aside.
Step 2:

Peel and cut the sweet potato into small cubes. Mix with 2 tablespoons of olive oil, salt, and pepper. Spread the cubes on a baking sheet lined with parchment paper and bake for 15 minutes at 200°C (400°F).

In a bowl, mix the lentils, sweet potato cubes, arugula, chopped parsley, cherry tomatoes, and the chopped red onion.

For the dressing: Add 1 tablespoon of olive oil, salt, and lemon juice. Mix well and you're done! Enjoy your meal!
