Replace your bread toasts with sweet potatoes! After baking, all you have to do is top them with your choice of ingredients. Avocado, feta cheese, some slices of tomatoes, and olive rings... you have a beautiful, easy-to-make, and colorful appetizer!
Ingredients
To make 4 sweet potato toasts:
- 1 small sweet potato (or half)
- 1 teaspoon olive oil
For the avocado toasts:
- 1/2 avocado
- 4 black olives
- 6 radishes
For the feta toasts:
- 1.7 ounces feta cheese
- 4 green olives
- 3 cherry tomatoes
- Parsley
- Sesame seeds
- Salt

Preparation
Step 1:
Step 1 - Sweet potato toasts
For the sweet potatoes: Preheat the oven to 350°F. Peel the sweet potatoes and cut them into slices about 1/2 centimeter thick. Arrange the slices on a baking sheet lined with parchment paper and brush with olive oil. Bake for 20 minutes.

Prepare the toppings: Slice the radishes, black olives, and green olives. Cut the cherry tomatoes into quarters. Rinse the parsley. Prepare the half avocado and feta.

For the avocado toasts: Mash the half avocado in a bowl and mix it with a pinch of salt. Spread the avocado puree on 2 toasts. For the feta toasts: Mash the feta cheese in a bowl. Sprinkle the feta crumbs on the other 2 toasts.

For the avocado toasts: On the avocado puree, place the radish slices, black olive slices, and sprinkle everything with sesame seeds. For the feta toasts: On the crumbled feta, place the green olive slices, cherry tomato quarters, and some parsley leaves.
