Suzette crepes, the traditionnal french recipe!

You all know crepes, these delicious thin pancakes brought to us by France. But they have a real special recipe using them with butter and orange, and here it is :
Ingredients
- 2 cups flour
- 4 eggs
- 2 cups milk
- 2 Tbsp oil
- 1 pinch of salt
- 1 orange juice
Suzette butter :
- 1/2 cup softened butter
- 1/2 cup icing sugar
- 1 tbsp orange juice
- 1 orange peels
- 2 tbsp triple sec
Preparation
Step 1:

The crepes : In a bowl, mix together the flour and the salt. Then add the eggs, the oil, and combine well.

If the batter is too hard to mix, you can pour a little bit of milk. Then, gradually add the milk, whisking everytime.
Step 3:

Finally add the orange juice and stir. Cover the bowl and leave to rest for 1 hour.

Suzette butter : Mix the softened butter with the icing sugar to make a cream.

Add the orange peels, the juice and the triple sec. Stir well. You should have some liquid that doesn't combine well.
Step 6:

Heat a large pan, and apply a little bit of oil with a paper towel. Pour a ladle of batter, turn your pan so the batter is spread everywhere, then let it cook for 1 minute. Then turn it over, and cook for 1 minute as well. Then take it out of the heat.

On each crepe, spread some Suzette butter, and fold it in 4.
Step 8:

Cook quickly the folded crepes in a hot pan with some butter.
