It's ultra-convenient, light and a great way to get by. Just add a simple filling of eggs, some skyr yoghurt, diced ham, zucchini and grated cheese... and off you go to the oven. The result: a soft, tasty quiche, and above all, super-easy to make ;)

Ingredients

  • 1 tortilla (wheat or corn)
  • 2 eggs
  • 3.5 oz/100 gr plain skyr yoghurt
  • salt
  • pepper
  • 1 oz/30 gr grated Emmental cheese
  • 1/2 zucchini
  • 2.5 oz/75 g diced ham
  • 5-10 fresh basil leaves

    Mix eggs, skyr, salt, pepper and grated Emmental cheese.

    Place a tortilla in a high-sided round tin.

    Pour the quiche mixture into the tortilla.

    Add the cooked zucchini pieces (see tips at the end of recipe ↓↓), diced ham and fresh basil leaves.
