King cake - epiphany brioche

This brioche is super easy to make and everyone will enjoy it ! Follow our step by step recipe to make this super fluffy brioche !
Ingredients
- 250 gr flour
- 1 tsp salt
- 70 gr sugar
- 10 gr fresh yeast
- 3 eggs
- 100 gr softened butter
- 1 Tsp orange blossom extract
- 1 egg to coat
- 30g pearl sugar

Step 1:

Put the flour, the salt, the sugar in a bowl and form a hole. Put the fresh yeast in it.

Add the eggs and begin to knead at speed 2 during about 8 minutes.

Add the softened butter gradually while kneading. When all the butter is added, continue to knead during about 10 minutes.

Leave the dough to rest during 45 minutes at room temperature. Degas the dough by applying some pressure on it, and put in the fridge for at least 1 hour and 30 minutes.

Put the dough on a floured surface. Degas it and form a ball. Form a hole in the center and open it by turning the dough around your hand.
Step 6:

Put the crown on a baking tray. Cover it and let it rest for at least 1h30.

Brush the brioche with a beaten egg and sprinkle the top with pearl sugar.

Bake 20 minutes at 350°F (180°C).
