Ingredients
The cake :
- 3.5 oz butter
- 3 eggs
- 5 fl oz sunflower oil
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp salt
- 4.5 oz brown sugar
- 4.5 oz white sugar
- 9 oz carrots
- 9 oz flour
- 3 oz peeled nuts
The cream :
- 3.5 oz butter
- 7 oz icing sugar
- 10 oz cream cheese
Preparation
Step 1:

Beat the 3 eggs. While stirring, add the other ingredients in the following order : - oil - melted butter (not hot) - vanilla extract - brown sugar - white sugar - half the flour Mix it well

Then add : - the flour left - cinnamon - salt - baking powder Mix it well
Step 3:

Blend carrots then add them to the mix.

Then add the nuts and stir.

Pour the dought in two same-sized moulds evenly. Bake for 30 minutes at 360°F.

Meanwhile, beat the softened butter and add the icing sugar, until creamy.

Finally, add the cream cheese and mix it well. Let it rest for 5 minutes in the fridge.

When cakes are cooked and cooled down, cut the top of each one, being as straight and parallel as possible.

Spread half the cream on the first cake, then put the other one on it (cut part inside).
